Sauté Vegetables
In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

Add Garlic
Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Combine Ingredients
Add the shredded smoked turkey, brown rice, vegetable broth, canned diced tomatoes (with their juice), bay leaves, salt, and black pepper to the pot. Stir well to combine.

Cook the Soup
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 30-35 minutes, or until the rice is tender.

Add Spinach
In the last 5 minutes of cooking, stir in the fresh spinach and let it wilt into the soup.

Remove the bay leaves before serving. Adjust seasoning with additional salt and pepper if needed.
