Method
Preparation
- 1
Prepare the Tomatoes
Wash the fresh tomatoes thoroughly. Remove the stems and cut them into quarters.
- 2
Chop the Garlic
Peel the garlic cloves and mince them finely.
- 3
Prepare the Basil
Rinse the fresh basil leaves and pat them dry. Tear the leaves into smaller pieces for better flavor release.
Cooking
- 4
Sauté the Garlic
In a large saucepan, heat the olive oil over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1 minute. Be careful not to brown the garlic.
- 5
Cook the Tomatoes
Add the quartered tomatoes to the saucepan. Stir well and cook for about 10-15 minutes, until the tomatoes are softened and start to break down.
- 6
Add Cream and Basil
Pour in the heavy cream and add the torn basil leaves. Stir to combine and let it simmer for another 5 minutes. Season with salt and black pepper to taste.
- 7
Blend the Sauce
Using an immersion blender, puree the sauce until smooth. If you don’t have an immersion blender, carefully transfer the sauce to a regular blender and blend in batches.
- 8
Serve
Ladle the tomato basil cream into bowls and garnish with freshly grated Parmesan cheese. Enjoy warm.
