Prepare the Eggs
In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined and slightly frothy.

Cook the Omelet
Heat a non-stick skillet over medium heat and melt the butter. Pour the egg mixture into the skillet, swirling to ensure even coverage. Cook until the edges begin to set, about 2-3 minutes.

Add Cheese
Sprinkle cheddar cheese on one side of the omelet, then fold the other half over the cheese. Cook for an additional 1-2 minutes until the cheese melts. Slide the omelet onto a plate.

Cook the Shrimp and Crawfish
Add the shrimp, crawfish, and andouille sausage to the skillet. Sprinkle with Cajun seasoning and cook for about 5 minutes until the shrimp are pink and cooked through.

Finish the Cream Sauce
Add the mushrooms and heavy cream. Stir to combine and simmer for another 3-4 minutes until it thickens slightly.

In a saucepan, bring water to a boil. Add salt.

Gradually whisk in the grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened.

Once cooked, stir in cream cheese and gouda cheese until melted and creamy. Season with black pepper to taste.
Assembly

Plate the Dish
Serve the omelet topped with the spicy shrimp and crawfish cream. Place the creamy grits on the side and garnish with crumbled bacon.
