Method

Pancakes

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. 2

    Mix Wet Ingredients

In another bowl, combine the buttermilk, eggs, melted butter, and vanilla extract. Mix until well combined.

  3. 3

    Combine Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it's okay if there are a few lumps.

  4. 4

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

Cream Cheese Grits with Gouda

  1. 5

    Boil Water

In a large saucepan, bring the water to a boil.

  2. 6

    Cook Grits

Add the grits to the boiling water and reduce the heat to low. Cook according to package instructions, stirring often, until thickened (about 5-7 minutes).

  3. 7

    Add Cheese

Once the grits are cooked, stir in the cream cheese and shredded gouda cheese until melted and creamy. Season with salt and black pepper to taste.

Bacon

  1. 8

    Cook the Bacon

While the pancakes and grits are cooking, fry the bacon in a skillet over medium heat until crispy (about 5-7 minutes). Drain on paper towels.

To Serve

  1. 9

    Plate and Serve

Serve the pancakes stacked high, topped with crispy bacon and a side of creamy gouda grits. Drizzle with maple syrup to taste.
