Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Rest the Dough
Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Mix the Filling
In a large mixing bowl, combine the wilted spinach, chopped artichoke hearts, softened cream cheese, minced garlic, chopped green onions, grated parmesan cheese, black pepper, and salt. Mix until well combined.

Roll Out the Dough
After resting, divide the dough into small balls (about 1 inch each). Roll out each ball into a thin circle on a floured surface.

Fill the Potstickers
Place a spoonful of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Cook the Potstickers
In a large skillet, heat vegetable oil over medium heat. Add the potstickers in a single layer and sauté for 2-3 minutes until golden brown.

Steam the Potstickers
Pour 0.5 cup of water into the skillet, cover immediately, and steam for about 5-7 minutes until the water evaporates and the potstickers are cooked through.

Remove the potstickers from the skillet and serve hot with your favorite dipping sauce.
