Filling

Phyllo Pastry

Method

Prepare the Filling

  1. 1

    Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

  2. 2

    Cook the Spinach

Add the chopped spinach to the skillet, stirring until wilted, about 3-4 minutes. Season with salt, black pepper, and ground nutmeg. Remove from heat and let the mixture cool slightly.

  3. 3

    Combine with Feta

Once the spinach mixture has cooled, add the crumbled feta cheese. Mix well to combine all ingredients evenly. Adjust seasoning if necessary.

Assemble the Phyllo

  1. 4

    Prepare the Work Surface

Preheat your oven to 180°C (350°F). Lay out a large baking sheet lined with parchment paper.

  2. 5

    Layer the Phyllo

Take one sheet of phyllo pastry and lay it flat on a clean surface. Brush the sheet lightly with melted butter. Repeat this process with 5 sheets, layering them on top of each other, brushing each with butter.

  3. 6

    Add the Filling

Spoon the spinach and feta filling along one edge of the layered phyllo. Be careful not to overfill.

  4. 7

    Roll the Pastry

Gently roll the phyllo over the filling to form a log. Ensure the filling is secured inside as you roll.

  5. 8

    Repeat and Brush

Repeat the process with the remaining phyllo sheets and filling. Place each rolled pastry seam-side down on the prepared baking sheet. Brush the tops lightly with more melted butter.

Bake

  1. 9

    Bake the Rolls

Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the phyllo is golden brown and crispy.

  2. 10

    Cool and Serve

Remove from the oven and let cool for a few minutes before slicing. Serve warm as an appetizer or a light main dish.
