Prepare the Filling

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Combine with Feta
Once the spinach mixture has cooled, add the crumbled feta cheese. Mix well to combine all ingredients evenly. Adjust seasoning if necessary.
Assemble the Phyllo

Prepare the Work Surface
Preheat your oven to 180°C (350°F). Lay out a large baking sheet lined with parchment paper.

Add the Filling
Spoon the spinach and feta filling along one edge of the layered phyllo. Be careful not to overfill.

Roll the Pastry
Gently roll the phyllo over the filling to form a log. Ensure the filling is secured inside as you roll.

Repeat and Brush
Repeat the process with the remaining phyllo sheets and filling. Place each rolled pastry seam-side down on the prepared baking sheet. Brush the tops lightly with more melted butter.

Bake the Rolls
Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the phyllo is golden brown and crispy.

Cool and Serve
Remove from the oven and let cool for a few minutes before slicing. Serve warm as an appetizer or a light main dish.
