Method

Preparation

  1. 1

    Prepare the Shrimp and Flounder

If using frozen shrimp or flounder, thaw them in the refrigerator overnight. Pat them dry with paper towels before proceeding.

Breading

  1. 2

    Make the Breading Mixture

In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. Mix well.

  2. 3

    Prepare the Egg Mixture

In another bowl, whisk together the eggs and milk until well combined.

Coating

  1. 4

    Coat the Seafood

Dip each shrimp and flounder fillet into the egg mixture, allowing any excess to drip off. Then coat it in the breading mixture, pressing lightly to adhere.

Frying

  1. 5

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of breading into it; if it sizzles, it's ready.

  2. 6

    Fry the Seafood

Carefully add the coated shrimp and flounder into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and cooked through.

  3. 7

    Drain the Fried Seafood

Remove the fried shrimp and flounder from the oil and place them on a plate lined with paper towels to drain excess oil.

Serving

  1. 8

    Plate the Dish

Serve the fried shrimp and flounder on a platter. Garnish with lemon wedges and chopped parsley.
