If you choose to brine the turkey, start by mixing the water, brown sugar, salt, black peppercorns, and bay leaves in a large pot. Stir until the sugar and salt are dissolved.

Submerge the turkey breast in the brine, cover, and refrigerate for 12 to 24 hours.

After brining, remove the turkey breast from the brine, rinse it under cold water, and pat it dry with paper towels.
