    Prepare the Flounder

    Rinse the flounder fillets under cold water and pat dry with paper towels.

    Make the Breading

    In one bowl, combine the flour, cornmeal, salt, black pepper, and paprika. In a separate bowl, whisk together the egg and milk.

    Bread the Flounder

    Dip each flounder fillet first into the egg mixture, allowing any excess to drip off, then coat it in the flour-cornmeal mixture. Ensure both sides are well coated.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

    Fry the Flounder

    Carefully place the breaded flounder fillets in the skillet. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Grilled Crabcake

    Shape the mixture into patties, about 3 inches in diameter and 1 inch thick. You should get about 4-6 crabcakes depending on size.
