Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for about 10 minutes until foamy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour and salt.

Combine Ingredients
Make a well in the center of the flour mixture. Add the activated yeast mixture and olive oil into the well.

Knead the Dough
Mix until a dough starts to form. Knead on a floured surface for about 8-10 minutes until smooth and elastic.

Allow to Rise
Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour until doubled in size.

Cook the Seafood
In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add shrimp and cook until pink, about 3-4 minutes. Add crawfish tails and sauté for another 2 minutes.

Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, Italian seasoning, salt, and black pepper. Allow to cook for 3-4 minutes until the sauce thickens slightly.
