    Make the Pasta Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, gradually mix the flour into the eggs until a dough starts to form.

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes at room temperature.

    Prepare the Filling

    In a bowl, combine the chopped shrimp, crab meat, ricotta cheese, grated Parmesan cheese, chopped parsley, lemon zest, salt, and black pepper. Mix until well combined.

    Roll Out the Dough

    Divide the dough into four pieces. Roll out each piece using a pasta machine or rolling pin until it’s very thin. Cut the dough into squares or circles, about 3 inches in diameter.
