Method

Prepare the Pasta

  1. 1

    Cook the Manicotti Shells

In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of salt. Once boiling, gently add the manicotti shells and cook according to package instructions until al dente. Drain and set aside to cool.

Make the Filling

  1. 2

    Combine Filling Ingredients

In a large mixing bowl, combine the ricotta cheese, chopped shrimp, crab meat, grated Parmesan cheese, chopped parsley, minced garlic, and black pepper. Mix thoroughly until well combined.

Prepare the Sauce

  1. 3

    Heat Marinara Sauce

In a medium saucepan, heat the olive oil over medium heat. Add the marinara sauce and dried oregano. Stir and let simmer for about 5 minutes, allowing the flavors to meld.

Assemble the Manicotti

  1. 4

    Fill the Manicotti

Using a small spoon or piping bag, carefully fill each manicotti shell with the seafood filling, ensuring they are packed well.

  2. 5

    Place in Baking Dish

Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the filled manicotti shells in a single layer on top of the sauce.

  3. 6

    Top with Sauce and Cheese

Pour the remaining marinara sauce over the filled manicotti shells. Sprinkle the shredded mozzarella cheese evenly over the top.

Bake the Manicotti

  1. 7

    Bake in Oven

Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve

  1. 8

    Garnish and Serve

Remove from the oven and let it rest for 5 minutes before serving. Garnish with extra chopped parsley if desired.
