Salmon Salad
Garlic Croutons
Method
Prepare the Salmon Salad
- 1
Dice the Smoked Salmon
Using a sharp knife, dice the smoked salmon into small, bite-sized pieces.
- 2
Prepare the Vegetables
Wash the mixed greens thoroughly and pat dry. Halve the cherry tomatoes and thinly slice the red onion.
- 3
Combine Salad Ingredients
In a large mixing bowl, combine the diced smoked salmon, mixed greens, halved cherry tomatoes, and sliced red onion.
- 4
Make the Dressing
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
- 5
Dress the Salad
Pour the dressing over the salad and gently toss to combine all ingredients.
Make the Garlic Croutons
- 6
Prepare the Bread
Cut the sourdough bread into small cubes, about 1-inch in size.
- 7
Season the Bread
In a mixing bowl, combine the bread cubes with olive oil, garlic powder, and salt. Toss until the bread is evenly coated.
- 8
Bake the Croutons
Preheat the oven to 180°C (350°F). Spread the seasoned bread cubes on a baking sheet in a single layer and bake for about 10-15 minutes, or until golden brown and crispy, tossing halfway through.
