Shrimp Scampi Basilico Sauce
Method
Preparing the Redfish
- 1
Marinate the Fish
In a bowl, combine olive oil, salt, black pepper, and lemon juice. Rub the mixture over the redfish fillets and let marinate for at least 15 minutes.
- 2
Grill the Fish
Preheat the grill to medium-high heat. Once hot, place the marinated redfish fillets on the grill. Cook for about 5-7 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and set aside.
Making the Shrimp Scampi Basilico Sauce

Sauté the Shrimp
In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp to the skillet and cook for 2-3 minutes, until they turn pink and opaque.
- 4
Add Tomatoes and Wine
Stir in the halved cherry tomatoes and cook for 2 minutes. Then pour in the white wine and bring to a simmer, allowing it to reduce slightly for about 3-4 minutes.
- 5
Finish with Basil
Add the chopped basil and red pepper flakes. Stir well and cook for an additional minute to allow the flavors to meld.
