    Prepare the rice

    Rinse 1 cup of rice under cold water to remove excess starch. In a medium saucepan, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.

    Prepare the pork

    While the rice is cooking, slice the pork loin into thin cutlets (about 1-2 cm thick). Season both sides with salt, black pepper, and paprika.

    Prepare the vegetables

    Chop the onion and mince the garlic. Rinse the spinach thoroughly and set aside.

    Cook the pork

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the pork cutlets in a single layer and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Sauté the vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until the onion is translucent. Add the spinach and cook until wilted, about 2-3 minutes.

    Combine and serve

    Return the cooked pork to the skillet with the spinach and onion mixture. Toss to combine and heat through for another 1-2 minutes. Serve the pork florentine over the cooked rice and sprinkle with grated Parmesan cheese.
