Ravioli Dough

Method

Ravioli Dough

  1. 1

    Make the Dough

In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs and olive oil. Mix until a dough forms.

  2. 2

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Cheese Filling

  1. 3

    Prepare the Filling

In a mixing bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, egg, salt, black pepper, and chopped basil. Mix until well combined.

Assemble Ravioli

  1. 4

    Roll Out the Dough

Divide the dough into four pieces. Roll out each piece into thin sheets, about 1/16 inch thick.

  2. 5

    Fill the Ravioli

Place small teaspoons of the cheese filling about 1 inch apart on one sheet of dough. Moisten the edges with water, then place another sheet of dough on top. Press down to seal, ensuring there are no air pockets.

  3. 6

    Cut the Ravioli

Use a knife or a ravioli cutter to cut between the filled portions to create individual ravioli. Place on a floured surface to dry.

Breading

  1. 7

    Prepare the Breading Station

In one bowl, beat the two eggs. In another bowl, combine breadcrumbs, grated Parmesan cheese, and salt.

  2. 8

    Bread the Ravioli

Dip each ravioli into the egg, then coat in the breadcrumb mixture. Ensure they are well covered.

Cooking

  1. 9

    Fry the Ravioli

In a large skillet, heat vegetable oil over medium heat. Once hot, fry the breaded ravioli in batches until golden brown, about 3-4 minutes per side.

  2. 10

    Heat the Sauce

While the ravioli are frying, heat the marinara sauce in a saucepan over low heat.

  3. 11

    Serve

Remove the fried ravioli and place on paper towels to drain excess oil. Serve hot with marinara sauce and garnish with fresh basil leaves.
