Method

Cooking the Ravioli

    Boil Water

    In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt to the water.

    Cook Ravioli

    Once the water is boiling, carefully add 400g of fresh cheese ravioli. Cook according to package instructions, typically about 4-5 minutes, or until they float to the surface.

    Drain Ravioli

    Once cooked, drain the ravioli and set aside, reserving a small amount of the cooking water.

Making the Sauce

    Heat Olive Oil

    In a large skillet, heat 3 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add 3 minced garlic cloves to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn.

    Add Tomatoes

    Add 300g of halved cherry tomatoes to the skillet. Cook for about 5 minutes, stirring occasionally until the tomatoes soften.

    Combine with Ravioli

    Gently add the drained ravioli to the skillet, tossing to combine with the tomatoes and garlic. If the mixture seems dry, add a splash of the reserved pasta water.

    Add Basil and Season

    Stir in 1 cup of chopped fresh basil and 2 tablespoons of balsamic vinegar. Season with salt and pepper to taste. Cook for an additional 2 minutes.

Serving the Dish

    Serve the ravioli mixture onto plates or in bowls.
