Ravioli Preparation

Make the Ravioli Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a bowl, mix the ricotta cheese, finely chopped jalapeno, salt, black pepper, and fresh basil until well combined.

Roll Out the Dough
After the dough has rested, divide it into four pieces. Roll out each piece as thinly as possible using a pasta machine or rolling pin.

Fill the Ravioli
Cut the rolled dough into 3-inch squares. Place a teaspoon of filling in the center of each square. Moisten the edges with water, fold over to form a triangle, and press to seal. Ensure there are no air pockets.

Fry the Ravioli
Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the ravioli in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Make the Alfredo Sauce
In a saucepan, melt butter over medium heat. Add minced garlic and sauté for about 1 minute. Stir in the heavy cream and bring to a simmer. Gradually add grated Parmesan cheese, stirring until melted. Season with salt and black pepper.

Serve the Ravioli
On a plate, create a bed of Alfredo sauce. Place the fried ravioli on top and drizzle with homemade marinara sauce. Garnish with additional grated Parmesan cheese and fresh basil if desired.
