Preparing the Cannoli Shells

Make the Dough
In a medium bowl, mix together the all-purpose flour, granulated sugar, cocoa powder, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the egg yolk, white wine (or vinegar), and water until a dough forms.

Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll and Cut the Dough
Once rested, roll out the dough to about 1/8 inch thickness. Use a round cookie cutter or a glass to cut out circles of dough, about 4 inches in diameter.

Wrap each circle around a cannoli tube, sealing the edges with a little water. Repeat until all circles are used.

Heat the vegetable oil in a deep frying pan over medium heat. Fry the shells until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels. Let cool completely before removing from the tubes.
