Method

Sauce Preparation

  1. 1

    Sauté Aromatics

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and diced onion, and sauté until the onion becomes translucent, about 5 minutes.

  2. 2

    Add Tomatoes

Crush the plum tomatoes by hand or with a fork and add them to the saucepan. Stir to combine.

  3. 3

    Season the Sauce

Add salt, black pepper, and sugar to the tomato mixture. Stir well and bring to a gentle simmer.

  4. 4

    Slow Cook

Reduce the heat to low and let the sauce simmer for at least 30 minutes, allowing the flavors to meld. Stir occasionally.

  5. 5

    Finish with Basil

Just before serving, stir in the fresh basil leaves and let them wilt in the heat of the sauce.

Pasta Cooking

  1. 6

    Boil Water

In a large pot, bring water to a boil. Add 1 tablespoon of salt to the boiling water.

  2. 7

    Cook Pasta

Add the angel hair pasta to the boiling water and cook according to package instructions (usually 3-5 minutes) until al dente.

  3. 8

    Drain Pasta

Once cooked, drain the pasta in a colander and reserve a small amount of pasta water if needed to adjust the sauce consistency.

Assembly

  1. 9

    Serve

Place a serving of angel hair pasta on a plate and ladle the marinara sauce over the top. Garnish with additional fresh basil if desired.
