Eggplant Preparation

Slice the Eggplant
Cut the eggplant into thin fries, about 1/4 inch thick. Place the slices on a paper towel and sprinkle with salt. Let them sit for about 15-20 minutes to draw out moisture.

Frying the Eggplant

Coat the Eggplant
Rinse the salted eggplant slices under cold water and pat dry with paper towels. Dip each slice first into the flour, then the egg, and finally coat with breadcrumbs.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Wasabi Aioli Preparation

Make the Aioli
In a mixing bowl, combine mayonnaise, wasabi paste, lemon juice, and minced garlic. Mix well until smooth and creamy. Season with salt to taste.
