    Set up three shallow bowls: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs mixed with black pepper and paprika.

Frying the Eggplant

    Coat the Eggplant

    Rinse the salted eggplant slices under cold water and pat dry with paper towels. Dip each slice first into the flour, then the egg, and finally coat with breadcrumbs.

    In a large skillet, heat the olive oil over medium-high heat until shimmering.
