Pork Tenderloin
Sautéed Vegetables
Brown Rice
Method
Prepare the Marinade
- 1
Make the Teriyaki Marinade
In a medium bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil until well combined.
- 2
Marinate the Pork
Place the center cut pork tenderloin in a resealable plastic bag or a shallow dish. Pour the teriyaki marinade over the pork, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Cook the Brown Rice
- 3
Grill the Pork Tenderloin
- 4
Preheat the Grill
Preheat your grill to medium-high heat.
- 5
Grill the Pork
Remove the pork from the marinade, letting the excess drip off. Place it on the grill and cook for 15-20 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).
- 6
Rest the Pork
Remove the pork from the grill and let it rest for 5-10 minutes before slicing.
Sauté the Vegetables
- 7
Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced bell pepper, zucchini, carrot, and onion. Season with salt and pepper. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
- 8
Add Teriyaki Glaze
Drizzle some of the remaining teriyaki marinade over the sautéed vegetables and stir to combine. Cook for an additional 2-3 minutes.
Assemble the Dish
- 9
Serve
To serve, place a bed of brown rice on each plate. Top with sliced grilled pork tenderloin and sautéed vegetables. Drizzle additional teriyaki glaze over the top, if desired.
