Method

Preparing the Rice

    Cook the Rice

    In a medium saucepan, combine 1 cup of long grain rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over high heat.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Cooking the Spinach Artichoke Cream

    Sauté Spinach

    In a skillet, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Spinach

    Add 2 cups of fresh spinach to the skillet and cook until wilted, about 2-3 minutes.

    Mix in Artichokes and Cream

    Stir in 1 cup of artichoke hearts, 4 oz of cream cheese, 1 cup of sour cream, and 1 cup of grated Parmesan cheese. Continue stirring until the mixture is smooth and heated through.

    Season the Cream

    Season the mixture with 1 tsp of salt and 1 tsp of black pepper. Stir well to combine and remove from heat.

Grilling the Pork Chops

    Season the Pork Chops

    Pat the 2 center cut pork chops dry with paper towels. Rub with 1 tbsp of olive oil, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of garlic powder on both sides.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Pork Chops

    Place the seasoned pork chops on the grill. Grill for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).

    Rest the Pork Chops

    Remove the pork chops from the grill and let them rest for 5 minutes before serving.

Serving the Dish

    Plate the Dish

    On each plate, serve a portion of rice, topped with the grilled pork chop, and generously spoon the spinach artichoke cream over the top.
