Preparing the Brown Rice

Cook the Brown Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 40-45 minutes or until rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Season the Pork
While the rice is cooking, season the center cut pork tenderloin with salt, black pepper, and garlic powder on all sides.

Grill the Pork
Preheat a grill or grill pan over medium-high heat. Add olive oil to the grill grates. Place the seasoned pork tenderloin on the grill and cook for about 15-20 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C). Remove from heat and let it rest for 5 minutes before slicing.

Sauté the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the bell peppers, zucchini, carrot, and broccoli florets. Sauté for about 5-7 minutes until the vegetables are tender-crisp.

Add Teriyaki Sauce
Pour the teriyaki sauce over the sautéed vegetables and stir to combine. Cook for an additional 2-3 minutes until the sauce is heated through and coats the veggies.
Serving

Plate the Dish
To serve, place a scoop of brown rice on a plate, top with the teriyaki veggies, and arrange slices of the grilled pork filet on the side. Drizzle any remaining teriyaki sauce over the top if desired.
