Method

Preparing the Flounder

  1. 1

    Marinate the Fish

In a small bowl, mix the olive oil, lemon juice, garlic powder, salt, and black pepper. Place the flounder fillets in a shallow dish and pour the marinade over the fish, ensuring it is evenly coated. Let it marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

While the fish is marinating, preheat your grill to medium-high heat.

Cooking the Flounder

  1. 3

    Grill the Fish

Once the grill is ready, place the marinated flounder fillets on the grill. Cook for about 3-4 minutes on each side or until the fish is opaque and flakes easily with a fork. Remove from the grill and set aside.

Making the Shrimp Mediterranean Sauce

  1. 4

    Sauté the Shrimp

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the shrimp and cook for 3-4 minutes until they are pink and opaque.

  2. 5

    Add Tomatoes and Olives

Stir in the cherry tomatoes and Kalamata olives. Cook for another 2-3 minutes until the tomatoes begin to soften.

  3. 6

    Season the Sauce

Add in the crumbled feta cheese, dried oregano, salt, and black pepper. Stir gently to combine and cook for an additional minute to warm the cheese.

  4. 7

    Finish with Fresh Parsley

Remove the skillet from heat and stir in the chopped fresh parsley.

Serving

  1. 8

    Plate the Dish

To serve, place a grilled flounder fillet on each plate and generously spoon the shrimp Mediterranean sauce over the top. Enjoy!
