Preparing the Homemade Marinara Sauce

Sauté the Garlic
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Tomatoes and Spices
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, sugar, and black pepper.

Simmer the Sauce
Bring the sauce to a simmer and cook for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
Preparing the Fried Mozzarella

Slice the Mozzarella
Cut the fresh mozzarella cheese into 1 cm thick slices.

Set Up the Breading Station
In three separate shallow dishes, place flour in the first, beaten eggs in the second, and Italian bread crumbs in the third.

Bread the Mozzarella
Take each slice of mozzarella, first coat it in flour, then dip it into the beaten eggs, and finally coat it with Italian bread crumbs, pressing gently to adhere.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Mozzarella
Carefully add the breaded mozzarella slices to the hot oil, frying in batches if necessary. Fry for about 2-3 minutes on each side until golden brown.

Drain Excess Oil
Remove the fried mozzarella and place it on a plate lined with paper towels to absorb excess oil.
Serving

Plate the Dish
On a serving plate, ladle a generous amount of homemade marinara sauce. Place the fried mozzarella slices on top.

Garnish and Serve
Garnish with fresh basil leaves if desired, and serve immediately while hot.
