Preparing the Lasagna

    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and set aside.

    In a large mixing bowl, combine ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, chopped fresh basil, salt, and black pepper. Mix well until all ingredients are fully combined.

    Spread a thin layer of the cheese mixture on each noodle. Roll the noodles up tightly, starting from one end and securing the filling inside. Place the rolled noodles seam side down in a greased baking dish.

Coating the Lasagna

    Set up a dredging station with three shallow bowls. In the first bowl, place all-purpose flour. In the second bowl, beat the eggs. In the third bowl, combine breadcrumbs, salt, and black pepper.

    Take each lasagna roll and dip it into the flour, shaking off the excess. Then dip into the beaten eggs, allowing any excess to drip off, and finally coat it in the breadcrumb mixture, pressing gently to adhere.

Frying the Lasagna

    In a large, deep skillet or frying pan, pour in vegetable oil and heat over medium-high heat until it reaches 350°F (175°C).

    Carefully add the coated lasagna rolls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them and place on paper towels to drain excess oil.
