Fried Green Tomatoes

    Prepare the tomatoes

    Wash the green tomatoes and slice them into 1/4 inch thick slices. Sprinkle salt and pepper on both sides of the slices. Set aside.

    Set up the breading station

    In one bowl, add the all-purpose flour. In a second bowl, beat the eggs and mix in the milk. In a third bowl, add the cornmeal, salt, and black pepper.

    Coat the tomatoes

    Dredge each tomato slice first in flour, then dip in the egg mixture, and finally coat with the cornmeal mixture. Make sure each slice is evenly coated.

    Fry the tomatoes

    In a large skillet, heat the oil over medium heat. Once hot, carefully add the coated tomato slices in batches, frying for about 3-4 minutes on each side, until golden brown. Remove and drain on paper towels.

Supreme Sauce

    Sauté the sausage

    In a saucepan over medium heat, melt the butter. Add the sliced andouille sausage and sauté for about 3-4 minutes until browned.

    Add shrimp and crawfish

    Add the shrimp and crawfish tails to the saucepan, cooking for an additional 3-4 minutes until the shrimp turns pink.

    Incorporate mushrooms and garlic

    Stir in the sliced mushrooms and minced garlic. Cook for another 2-3 minutes until the mushrooms soften.

    Make the sauce

    Pour in the heavy cream and add the Cajun seasoning. Stir well and let the sauce simmer for about 5-7 minutes, allowing it to thicken slightly. Adjust seasoning if necessary.
