Fried Flounder

    Prepare the Breading

    In a shallow dish, combine flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

    Prepare the Egg Wash

    In another shallow bowl, whisk together eggs and milk until thoroughly combined.

    Bread the Flounder

    Dip each flounder fillet first into the egg wash, allowing excess to drip off, then dredge in the flour mixture, coating evenly.

    Fry the Flounder

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded flounder fillets. Fry for about 3-4 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

House Slaw

    Prepare the Slaw

    In a large bowl, combine the shredded cabbage and shredded carrot.

    Make the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

    Pour the dressing over the cabbage and carrot mixture. Toss thoroughly to combine. Refrigerate for at least 30 minutes before serving.

Taco Assembly

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Place a few pieces of fried flounder on each tortilla, top with house slaw, and sprinkle with chopped cilantro.
