Method

Fish Preparation

  1. 1

    Prepare the Coating

In a large bowl, mix together the all-purpose flour, cornmeal, baking powder, salt, black pepper, and paprika.

  2. 2

    Prepare the Buttermilk Mixture

In another bowl, whisk together the egg and buttermilk until well combined.

  3. 3

    Coat the Flounder

Dip each flounder fillet into the buttermilk mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated. Set aside on a plate.

  4. 4

    Heat the Oil

In a large, heavy-bottomed skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

  5. 5

    Fry the Flounder

Carefully place the coated flounder fillets in the hot oil, cooking for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Sandwich Assembly

  1. 6

    Prepare the Vegetables

Slice the tomato into thick slices and wash the lettuce leaves.

  2. 7

    Assemble the Sandwich

On each hamburger bun, spread a generous amount of tartar sauce. Place a fried flounder fillet on top, followed by lettuce, tomato slices, and pickles.

  3. 8

    Top with Bun

Cover with the top half of the bun and press down gently.

Fries

  1. 9

    Prepare the Potatoes

Peel the potatoes and cut them into uniform fries. Soak in cold water for at least 30 minutes to remove excess starch.

  2. 10

    Heat the Oil for Frying

In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 11

    Fry the Potatoes

Fry the potatoes in batches for about 5-6 minutes or until golden and crispy. Remove and drain on paper towels. Season with salt to taste.
