Prepare the Eggplant
Wash the eggplant thoroughly under running water. Cut off the stem and slice the eggplant into thin strips (about 1/4 inch thick) to resemble fries. Place the eggplant strips in a colander, sprinkle with salt, and let them sit for about 30 minutes to draw out excess moisture and bitterness.

After 30 minutes, rinse the eggplant strips under cold water to remove excess salt and pat them dry with paper towels. Heat the vegetable oil in a deep frying pan or skillet over medium-high heat. Once the oil is hot, take each eggplant strip, coat it in flour, dip it in the egg mixture, and then coat it with the breadcrumb mixture. Carefully place the coated strips in the hot oil, frying them in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side.
