Method

Gnocchi Preparation

    Boil Potatoes

    Place the Russet potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 20-25 minutes. Drain and let cool slightly.

    Mash Potatoes

    Once the potatoes are cool enough to handle, peel them and mash until smooth. Measure out 2 cups of mashed potatoes and place it in a mixing bowl.

    Combine Ingredients

    Add the all-purpose flour, egg, and salt to the mashed potatoes. Mix until a dough forms. If the dough is sticky, add a little more flour as needed.

    Shape Gnocchi

    Divide the dough into four portions. Roll each portion into a long rope about ½ inch thick. Cut the rope into 1-inch pieces. Optionally, use a fork to create ridges on each piece.

    Cook Gnocchi

    Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water. Once they float to the top, cook for an additional 2-3 minutes. Remove with a slotted spoon and set aside.

Shrimp Tomato Basil Cream Sauce Preparation

    Sauté Shrimp

    In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove shrimp from the skillet and set aside.

    Make the Sauce

    In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Pour in the canned crushed tomatoes and bring to a simmer.

    Add Cream and Season

    Stir in the heavy cream, chopped basil, salt, and black pepper. Let the sauce simmer for about 5 minutes until slightly thickened.

    Combine Shrimp and Sauce

    Return the cooked shrimp to the skillet and stir to combine. Allow to heat through for 2-3 minutes.

    Serve

    Serve the shrimp tomato basil cream sauce over the freshly cooked gnocchi. Garnish with additional basil if desired.
