Preparing the Flounder

Marinate the Flounder
In a small bowl, mix together olive oil, salt, black pepper, and lemon juice. Brush the mixture over both sides of the flounder fillets and let them marinate for at least 15 minutes.

Making the Mediterranean Sauce

Sauté the Vegetables and Shrimp
In a large skillet over medium heat, add a splash of olive oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the sliced mushrooms and cook until they are softened, about 3-4 minutes.

Add Remaining Ingredients
To the skillet, add the chopped artichoke hearts, sun-dried tomatoes, capers, olives, and shrimp. Pour in the white wine and bring to a simmer. Cook for another 5-7 minutes, or until the shrimp turn pink and are cooked through.

Serve the Dish
Once the sauce is ready, spoon it generously over the grilled flounder fillets. Garnish with chopped fresh parsley before serving.
