Prepare the Eggplants
Slice the eggplants in half lengthwise and scoop out the flesh, leaving about 1/2-inch of the shell. Set aside the flesh for later use.

Chop the Vegetables
Dice the red bell pepper, zucchini, onion, and garlic finely. Set aside.
Cooking

Cook the Meat
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground beef or turkey and cook until browned, about 5-7 minutes. Drain any excess fat.

Sauté the Vegetables
Add the chopped onion and garlic to the skillet with the meat. Sauté for about 3 minutes until the onion becomes translucent. Then add the diced red bell pepper and zucchini, cooking for an additional 5 minutes.

Combine with Tomato Sauce
Stir in the reserved eggplant flesh, tomato sauce, dried oregano, dried basil, salt, and black pepper. Simmer for 10 minutes on low heat.

Stuff the Eggplants
Preheat the oven to 375°F (190°C). Stuff the hollowed eggplant halves with the meat and vegetable mixture, pressing down gently to pack it in.

Top with Cheese
Sprinkle shredded mozzarella cheese generously on top of the stuffed eggplants.

Bake
Place the stuffed eggplants on a baking sheet and bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.

Garnish and Serve
Remove the eggplant gondolas from the oven and let them cool slightly. Garnish with fresh basil leaves before serving.
