Preparing the Duck

Cook the Duck Breast
Preheat your oven to 375°F (190°C). Season the duck breast with salt and black pepper. Place it skin-side up in a roasting pan and cook for 20-25 minutes, or until the skin is crispy and the meat is medium-rare. Let it rest for 10 minutes before slicing.

While the duck is resting, combine the mung bean sprouts, julienned carrot, cucumber, chopped green onions, and minced garlic in a large bowl. Shred the cooked duck breast and add it to the vegetable mixture.

Add soy sauce and sesame oil to the filling mixture. Toss everything together gently until well combined. Adjust seasoning with additional salt and pepper if needed.
Assembling the Spring Rolls

Wrap the Spring Rolls
Lay a spring roll wrapper on a clean surface with one corner pointing towards you. Place about 2-3 tablespoons of the filling mixture just above the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly to seal. Repeat with remaining wrappers and filling.
