Blackened Andouille Cream

Preparation of Crawfish Topping

    Sauté Crawfish

    In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

    Add Crawfish and Season

    Add the crawfish tails, Cajun seasoning, chopped green onions, salt, and black pepper to the skillet. Cook for about 5-7 minutes until the crawfish is heated through and the onions are softened. Set aside.

Preparation of Blackened Andouille Cream

    Cook Andouille Sausage

    In another skillet, melt the butter over medium heat. Add the diced Andouille sausage and sauté until browned and crispy, about 5-7 minutes.

    Make the Cream Sauce

    Pour in the heavy cream and Cajun seasoning. Stir constantly and bring to a simmer. Cook for an additional 5 minutes until the sauce thickens slightly. Stir in the lemon juice before removing from heat.

Assemble and Toast

    Prepare the Ciabatta

    Preheat the oven to 400°F (200°C). Slice the ciabatta loaves in half lengthwise and place them cut-side up on a baking sheet.

    Add Toppings

    Evenly distribute the sautéed crawfish mixture over the ciabatta halves. Drizzle the blackened Andouille cream sauce over the top.

    Toast the Bread

    Place the baking sheet in the preheated oven and toast for about 10-12 minutes or until the edges are golden brown and crispy.

    Serve

    Remove from the oven, let cool for a minute, cut into portions, and serve warm.
