Prepare Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

Combine Ingredients
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay. Fold in the milk chocolate chips.

Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.

Once the grits are cooked, remove them from heat and stir in the cream cheese and shredded gouda until melted and creamy.
