Main Ingredients

Method

Preparation

  1. 1

    Prepare Chicken

Season the chicken breasts with salt and black pepper on both sides. Lightly dredge each breast in all-purpose flour, shaking off any excess flour.

  2. 2

    Mince Garlic

Peel and mince the garlic cloves. Set aside for later use.

Cooking

  1. 3

    Heat Oil and Butter

In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.

  2. 4

    Cook Chicken

Add the floured chicken breasts to the skillet in a single layer. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken and set aside on a plate.

  3. 5

    Sauté Garlic

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

  4. 6

    Deglaze the Pan

Add the chicken broth and lemon juice to the skillet, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

  5. 7

    Add Capers

Stir in the capers and return the chicken to the skillet. Let it simmer for an additional 3-4 minutes to heat through and absorb the flavors.

  6. 8

    Finish with Butter and Parsley

Remove the skillet from heat and stir in the remaining 2 tablespoons of butter and the chopped fresh parsley until melted and combined.

Serving

  1. 9

    Plate and Serve

Serve the chicken piccata hot, spooning the sauce over the top. Garnish with additional parsley if desired.
