Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Dredge the Chicken

Set up a dredging station: place all-purpose flour in one shallow dish, beat the eggs in a second dish, and place breadcrumbs mixed with grated Parmesan cheese in a third dish. Dredge each chicken breast in flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.

  3. 3

    Fry the Chicken

In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

Sauce Preparation

  1. 4

    Make the Sauce

In the same skillet, add more olive oil if necessary, and sauté the minced garlic until fragrant, about 1 minute. Add the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Simmer for about 10 minutes, stirring occasionally.

Assembly and Baking

  1. 5

    Assemble the Dish

In a baking dish, spread a layer of the tomato sauce on the bottom. Place the fried chicken breasts on top and cover each with more tomato sauce. Sprinkle shredded mozzarella cheese evenly over the top.

  2. 6

    Bake the Chicken Parmigiana

Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

  3. 7

    Garnish and Serve

Remove from the oven, garnish with fresh basil leaves, and serve hot with pasta or a side salad.
