Pasta Preparation

Cook the Fettuccine
In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Season the Chicken
While the pasta is cooking, preheat a skillet over medium heat. Rub chicken breasts with olive oil, garlic powder, salt, and black pepper.

Cook the Chicken
Add the seasoned chicken to the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from heat, let it rest for a few minutes, then slice into strips.
Alfredo Sauce Preparation

Make the Alfredo Sauce
In the same skillet, melt butter over medium heat. Add the roasted garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer.

Add the Cheeses
Stir in the grated Parmesan cheese, salt, and black pepper. Continue to cook for another 3-4 minutes until the sauce thickens slightly. Add the shredded mozzarella and stir until melted.

Combine with Pasta
Add the cooked fettuccine to the sauce, tossing to coat. If the sauce is too thick, gradually add reserved pasta water until reaching desired consistency.

Finish with Gorgonzola
Fold in the crumbled Gorgonzola cheese and sliced chicken. Allow to heat through for 1-2 minutes.
