Crust

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Shape the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes until set and golden. Remove from the oven and let it cool.

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add granulated sugar and continue to beat until well combined.

    Add Remaining Ingredients

    Add sour cream and vanilla extract to the cream cheese mixture and mix until smooth. Lastly, add eggs one at a time, mixing on low speed until just blended. Do not overmix.

    Bake the Cheesecake

    Pour the cheesecake filling into the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

    Cool and Chill

    After an hour, remove the cheesecake from the oven and let it cool at room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight to set completely.

    Before serving, drizzle your choice of chocolate sauce, raspberry sauce, caramel sauce, or banana foster sauce over the top of the cheesecake. Serve chilled.
