    Make the Pasta Dough

    In a large mixing bowl, combine the all-purpose flour and salt.

    Add Eggs

    Make a well in the center of the flour mixture and crack in the eggs. Using a fork, beat the eggs gently, incorporating the flour from the edges of the well until a dough starts to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Cheese Filling

    In a bowl, mix the ricotta cheese, Parmesan cheese, black pepper, and salt until well combined.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece on a floured surface until very thin.

    Form the Ravioli

    Cut the rolled dough into squares, place a teaspoon of the cheese mixture in the center of half the squares. Moisten the edges with water and place another square on top, sealing the edges tightly.

For the Salute Bolognese Sauce

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.

    Cook the Meat

    Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Let the sauce simmer on low heat for about 30 minutes.

    Cook the Ravioli

    In a large pot of salted boiling water, cook the ravioli for about 4-5 minutes or until they float to the surface.

    Serve

    Drain the ravioli and plate them. Top with the Bolognese sauce and sprinkle with Parmesan cheese before serving.
