Method

Preparation

  1. 1

    Prep the Ingredients

Start by rinsing the catfish fillets under cold water and patting them dry with paper towels. Season both sides of the catfish with salt and black pepper. Set aside.

  2. 2

    Prep the Shrimp

If not already done, peel and devein the shrimp. Rinse them under cold water and pat dry.

  3. 3

    Chop the Vegetables

Dice the onion and red bell pepper. Halve the cherry tomatoes. Mince the garlic and set aside the fresh basil leaves.

Cooking

  1. 4

    Heat the Oil

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

  2. 5

    Cook the Catfish

Add the seasoned catfish fillets to the skillet. Cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the catfish from the skillet and set aside.

  3. 6

    Cook the Shrimp

In the same skillet, add the remaining 2 tablespoons of olive oil. Once hot, add the minced garlic and sauté for 30 seconds until fragrant. Add the shrimp and cook for 3-4 minutes, or until they turn pink and opaque.

  4. 7

    Add Vegetables

Stir in the diced onion, red bell pepper, and halved cherry tomatoes. Season with lemon juice, salt, black pepper, and red pepper flakes. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.

  5. 8

    Combine and Finish

Add the cooked catfish back to the skillet along with the fresh basil leaves. Gently toss everything together for about 1-2 minutes until the basil is wilted and the catfish is heated through.

Serving

  1. 9

    Plate and Serve

Transfer the Catfish Shrimp Basilico to a serving platter. Garnish with additional fresh basil if desired and serve immediately.
