Method

For the Calamari

  1. 1

    Prepare the Calamari

Rinse the cleaned calamari under cold water and pat them dry with paper towels. This step is essential to ensure a crispy texture.

  2. 2

    Mix the Coating

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well to create an even coating for the calamari.

  3. 3

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

  4. 4

    Coat the Calamari

Take a handful of calamari rings and legs and toss them in the flour mixture until well coated. Shake off any excess flour.

  5. 5

    Fry the Calamari

Carefully add the coated calamari to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Avoid overcrowding the pan.

  6. 6

    Drain and Serve

Once fried, remove the calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately.

For the Marinara Sauce

  1. 7

    Heat the Oil

In a medium saucepan, heat the olive oil over medium heat.

  2. 8

    Sauté the Garlic

Add the minced garlic to the pan and sauté for 1-2 minutes, or until fragrant. Be careful not to let it brown.

  3. 9

    Add the Tomatoes and Seasonings

Pour in the crushed tomatoes and add the dried oregano, red pepper flakes, and salt. Stir to combine.

  4. 10

    Simmer the Sauce

Let the sauce simmer for about 15 minutes, stirring occasionally. This allows the flavors to meld together.

  5. 11

    Finish with Basil

Stir in the chopped fresh basil just before serving to add a fresh flavor.
