Prepare the Calamari
Rinse the cleaned calamari under cold water and pat them dry with paper towels. This step is essential to ensure a crispy texture.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well to create an even coating for the calamari.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

Coat the Calamari
Take a handful of calamari rings and legs and toss them in the flour mixture until well coated. Shake off any excess flour.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Avoid overcrowding the pan.

Drain and Serve
Once fried, remove the calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately.
