In a mixing bowl, combine the crab meat, bread crumbs, mayonnaise, Dijon mustard, Worcestershire sauce, green onion, parsley, beaten egg, Old Bay seasoning, salt, and black pepper. Mix gently until all ingredients are well incorporated.

Using your hands, form the crab mixture into small patties, about 2-3 inches in diameter. Place the formed crab cakes on a plate and refrigerate for at least 30 minutes to firm up.

Prepare the Redfish
Preheat your grill or skillet over medium-high heat. Rub the redfish fillets with olive oil and then sprinkle the blackening seasoning evenly on both sides.

Cook the Redfish
Place the seasoned redfish fillets on the grill or skillet. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from heat and let rest.
