Method
Cooking the Pasta
- 1
Boil the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
Preparing the Beef
- 2
Season the Steak
While the pasta is cooking, season the beef tenderloin steak with salt and black pepper on both sides.
- 3
Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steak and sear for about 3-4 minutes on each side for medium-rare. Adjust time to reach desired doneness. Remove from skillet and let rest for 5 minutes before slicing.
Making the Sauce
- 4
Prepare the Sauce
In the same skillet used for the steak, lower the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the crumbled Gorgonzola cheese until melted and combined.
- 5
Finish the Sauce
Add the chopped parsley, basil, and red pepper flakes to the sauce. Stir well and let it simmer for another 2-3 minutes.
