Preparation

Prepare the Asparagus Filling

1. Trim and Cook Asparagus

Trim the woody ends off the asparagus and cut the stalks into 2-inch pieces. Heat the olive oil in a skillet over medium heat. Add the asparagus and sauté for about 5 minutes until tender but still crisp.

2. Add Garlic and Seasoning

Add minced garlic to the skillet and sauté for an additional minute until fragrant. Season the mixture with salt and black pepper. Remove from heat and let it cool slightly.

3. Mix in Parmesan

Once the asparagus mixture has cooled, stir in the grated Parmesan cheese until well combined.

Assemble the Phyllo Pastry

4. Prepare Phyllo Sheets

Preheat your oven to 375°F (190°C). Lay out one phyllo sheet on a clean surface and brush it lightly with melted butter. Place another phyllo sheet on top and repeat the buttering process. Do this for a total of 4 sheets.

5. Add Filling

Spoon a portion of the asparagus filling along one edge of the stacked phyllo sheets, leaving about an inch of space from the edges.

6. Roll and Seal

Carefully roll the phyllo over the filling to create a log shape, tucking in the edges as you go to seal the filling inside. Brush the top of the roll with additional melted butter. Repeat with the remaining phyllo sheets and filling.

Bake

7. Bake the Rolls

Place the assembled phyllo rolls on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.

8. Cool and Serve

Once baked, remove the rolls from the oven and let them cool slightly before slicing. Serve warm as an appetizer or side dish.
