For the Chocolate Bombs

    Preheat the Oven

    Preheat your oven to 180°C (350°F) and prepare a muffin tin by greasing it lightly.

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals until melted and smooth, stirring in between.

    Combine Ingredients

    In a mixing bowl, whisk together the granulated sugar, eggs, amaretto liqueur, and vanilla extract until well combined. Gradually add in the melted chocolate mixture, mixing until smooth.

    Add Dry Ingredients

    Sift together the all-purpose flour, baking powder, and salt. Fold the dry ingredients into the wet mixture until just combined.

    Bake the Bombs

    Pour the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft.

    Cool Down

    Remove from the oven and allow to cool for a few minutes before carefully removing the chocolate bombs from the muffin tin.

For the Raspberry Sauce

    Prepare the Sauce

    In a small saucepan, combine the fresh raspberries, granulated sugar, water, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, about 5-7 minutes.

    Strain the Sauce

    Remove from heat and strain the raspberry sauce through a fine mesh sieve to remove the seeds. Set aside to cool.

For the Whipped Cream

    Whip the Cream

    In a mixing bowl, whip the heavy cream with an electric mixer on medium speed until it begins to thicken.

    Add Sweetener

    Add the powdered sugar and vanilla extract, then continue whipping until stiff peaks form.

To Serve

    Place a warm chocolate bomb on a plate, top with whipped cream, and drizzle with raspberry sauce. Serve immediately and enjoy the explosion of chocolate!
