Po-Boy Directions

Prepare the Meatballs
In a large bowl, combine ground beef, Italian breadcrumbs, grated Parmesan cheese, minced garlic, egg, salt, and black pepper. Mix until well combined.

Form and Cook the Meatballs
Shape the mixture into small meatballs, about 1 inch in diameter. In a skillet, heat oil over medium heat and fry the meatballs until browned and cooked through, about 10-12 minutes. Set aside.

Prepare the Shrimp
If using shrimp, season the shrimp with salt and black pepper. In the same skillet, add more oil if necessary and fry the shrimp until pink and cooked through, about 3-4 minutes. Set aside.

Assemble the Po-Boy
Cut the French baguette in half and fill one half with either meatballs or shrimp. Top with shredded lettuce, sliced tomatoes, and pickles. Repeat for the other half if making both options.

Add Garlic and Tomatoes
Stir in minced garlic and cook for another minute. Then add the canned diced tomatoes and stir well.

Simmer the Soup
Pour in vegetable broth, add Italian herbs, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.

Cook the Pasta
Add the pasta to the soup and cook according to package instructions, usually about 8-10 minutes, until al dente.

Serve the Soup
Once the pasta is cooked, taste and adjust seasoning if necessary. Serve hot alongside the Po-Boy.
