Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine flour and salt. Gradually add the yeast mixture and mix until a dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Prepare Baking Soda Bath
Preheat your oven to 450°F (230°C). In a large pot, bring 10 cups of water and baking soda to a boil.

Shape Pretzels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long stick, about 12-14 inches long.

Boil Pretzels
Carefully drop each pretzel stick into the boiling baking soda water for about 30 seconds, then remove with a slotted spoon.

Egg Wash and Salt
Place the boiled pretzel sticks on a greased baking sheet. Brush with beaten egg and sprinkle with coarse sea salt.

Bake in the preheated oven for 12-15 minutes or until golden brown.
